can I convert my old molds to be probe style ? moulds are steel -alum- and brass. single and 4 cavity.

Hhmmm . . . Please explain what "probe style" is?

I think they're referring to having the moulds drilled for the temp probe for the NOE mould thermometer.

I use a thermocouple for my molds that screws into a 1/4-20 tapped hole. Got the stuff from Auber. The probe style has advantages and disadvantages, as does the screw-in style. Just wanted to share an option that some folks aren't aware of.
