Very simple. You can also substitute stuffing for the rice.
I used one of those Rice Medley Spanish Rice packs for the quick and easy stovetop kind. Add water, bring to boil, let it simmer for 5 minutes.
Cut the breast in half and put the rice between them. Wrap in two strips bacon and secure with toothpicks.
Put in a pan and surround the breasts with the rice and add 2-3 Tablespoons of grouse or chicken stock. Cover with foil and bake at 350 degrees for 45 minutes, remove foil and continue baking for 15 minutes.
Allow one breast and two strips of bacon per serving.
