Take a tougher cut of beef and run it through a cuber or get cube steak. Venison or Elk sirloin work well as is. Slice 1/3" thick. Beat an egg and dip the steaks then coat with seasoned bread crumbs. Fry as a chicken fried steak then when rarer than you usually eat it remove and top with spaghetti sauce such as Prego or Ragu, then cover with mozarella cheese. Broil until the cheese is melted and serve.

Sounds like venison parmesan to me MT Gianni. But I never met one that ididn't like either! LOL
