I like making these jalapeno peppers and they are easy to make.
Cut peppers in half remove seeds and membrane, the membrane has a lot of the heat as does the seeds.

For every 12-14 peppers use one package of cream cheese.

. Mix in bacon bits or you can fry up 3-4 slices of bacon (extra crispy) crumble into cream cheese, soften cream cheese in microwave for 20 seconds. put cream cheese in peppers.

Top with cheddar cheese or in the picture I used Mexican mix cheese.
Put in oven @ 350 until cheese on top is golden brown.

I was so excited and my mouth was watering that I ate my share before I thought to take the final picture.

I've been making these for several years, and even
people who say they don't like "Hot stuff" like them.

Hickory like you said. If you take out the seeds an soft membrane inside. Most of the heat goes to. (the one thing I learned from the wife watching those cooking shows)

I tried making my first batch last July and it didn't come out to good I used a little to much spice. I'm gonna try this recipe for sure and maybe mix baby shrimp with the cream cheese!

Making my mouth water. Very few things in the world I love more than peppers. Hot, not so Hot, I love them all.

I like to slice the tops off and Core them. Take a slice of honey baked ham and spread cream cheese on it then roll up. Stuff this into the pepper and smoke/roast them over mesquite in my grill. I have one of those "Pepper Popper" racks to hold them on the grill.

Always the FIRST thing to be eaten, no matter what the "main course" is.

I've made these for quite a while. I wrap mine with a slice of bacon and grill them. Try adding a little chopped cilantro to the cream cheese mix.

I do like the looks of the cheddar on top- will give that a try.

These also come out great if smoked over hickory or mesquite for 3-4 hrs.

I made up a quarter sheet pan full of these on Christmas day and was surprised at how quick they disappeared with only five of us there to test them.....

Thanks for sharing...
