Marinated Pork Loin

This recipe is for a 2 lb pork loin (preferably wild, lean pork)

Marinade
1/3 cup olive oil
1/3 cup lime juice
3 large cloves of garlic (diced)
2 tbsp soy sauce
2 tbsp red wine vinegar
2 tbsp yellow mustard
1 tsp ground ginger

Combine ingredients in blender and blend. Pour over pork loin in a ziplock bag and marinate the meat in the fridge for several hours (preferably all day, or overnight).

Pull the pork loin out of the marinade and bake it for 2 hours at 325F (save the marinade).

While the meat is in the oven, prepare the onion marmalade:

Onion Marmalade
1 large purple onion (finely diced)
3 tbsp olive oil
salt and pepper to taste

Sauté over medium heat. When the onions start to clarify, then add 3 tbsp of red wine vinegar and stir for about a minute. Then add 1/4 cup water and stir. Add 3 tbsp honey and stir, allow to simmer for a couple of minutes. Add the leftover marinade to the onions and stir gently. Add drippings from the pork loin and stir. Turn off heat and cover.

Allow the meat to sit at room temp for about 10 minutes before slicing (this helps to preserve the juices), then serve with onion marmalade, salad, vegetable and your favorite wine (merlot is very good).
