    DIY Energy bars for the trail

    NOT Low Cal or Low Sugar


    BACKWOODS ENERGY BARS

    1 cup peanut butter
    3/4 cup honey
    2 1/2 cups quick (instant) oatmeal
    1 cup raisins, dried fruit or chocolate chips
    3/4 cup shredded coconut

    Combine the peanut butter and honey in a medium saucepan and warm over low heat or Double Boiler.
    Stir constantly until thoroughly mixed and warmed up.
    Remove from heat and add in the, raisins,coconut, etc and mix, finally adding oatmeal and mix a final time.
    Press into a 9×9 inch ungreased pan and let cool.
    Cut into bars and wrap with clear plastic cling wrap or waxed paper.
    No need to refrigerate.

    I of course altered it to
    1 cup peanut butter
    3/4 cup honey
    2 1/2 cups quick (instant) oatmeal
    3/4 cup shredded coconut
    1/2 cup of Spanish Peanuts
    1/2 cup of Nutella (chocolate/Hazelnut spread)

    Good base recipe, can add whatever you like or whatever is in season! Dried fruits, nuts, candy in all forms...

    I add cocoa instead of chocolate chips, and throw in quinoa, chia seeds, etc. Just have it in a baggy. A buddy calls it bear scat.
    Don't want no one to git hurt, but if you're gonna have a wreck, I wanna watch.

    FWIW I have found that if you take about half of your oats and throw them into the blender and make oat flour that it helps bars like this hold together a little better. This looks like a good recipe.

    Same reason I make oat flour to make meatloaf. Binds and makes it really moist. I buzz it in the coffee grinder I use for spices.

    Pemmican! I make it once in awhile... pretty high fat. Recipe is on the internet.
