    Collagen casing for sausage ?

    Just curious . Was thinking about using collagen casings on the next batch of sausage . We have only used hog casings and they work great , just wanted to experiment .
    What are the pros and cons with the collagen casings ? Thanks !

    Well, for one thing, they're not pig intestines. To me, that's a "pro". Can't really think of any "cons".

    To me they don't taste as good . I haven't stuffed sausage in at least 5 years though so they might have improved since then. Hope I'm close enough to sample some!

    They may not taste 'natural' but you can store the collagen casings a long, long time until you use them, and they tend to be more uniform in size and thickness.

    More fibrous. I used them once and won't go back.

    I find them tough after cooking unless you like to boil your sausage...

    fine for smoked meat like slim jims but I don't care for them for cooked sausage. Just not the right consistency.

    Well heck , I have about disqualified out these for now . Had reservations about them and ya'll have reinforced them .

    I'm not a fan of collagen cases either. Used them to make some breakfast link sized Chorizo sausage. As mentioned they're tough when cooked. They also won't stay twisted into links. I've seen some tricks online for braiding/linking collagen sausages but haven't tried it yet. Just twisting them doesn't work. You could use kitchen twine or hog rings (haven't found any small enough for breakfast links) but that's a lot of extra work/expense.

    Collagen casings also don't expand like natural casings, no give to them at all. I am not a fan. Sheep casings are more work, but they make a fine breakfast sausage. I reserve the right to change my opinion though. Always like experimenting.
