    Smile Waffle Recepie

    First of all, Merry Christmas.

    Second,
    My wife is going away for a few days before Christmas to see her family, I get to stay home and take care of the dogs (8), and keep the house warm.

    Third,

    What is a good waffle recepie?
    I have a waffle Iron that gets used whenever she is out of town.

    4 eggs
    2 c sifted flour
    1 tsp salt
    1 tsp baking soda
    1 tsp baking powder
    2 c milk w/ 1 tbs lemon juice to make a full cup
    1 c melted butter

    Beat eggs until light. Sift flour, salt, soda, and baking powder. Mix milk and lemon juice and let stand. Add flour and milk to eggs and blend with melted butter. Makes 4 or 5 waffles.

    3 cups sourdough, 1 tsp salt, 1 tsp sugar add 1/2-1 tsp baking soda and let it percolate for a bit. After it has bubbled well add 1 beaten egg and 1 1/2-2 TBSP cooking oil.

    You can make sourdough by leaving equal parts white flour and water mixed well out for 3-5 days. It will start to bubble slightly as it captures natural yeasts. Non Purists can cheat by adding 1/2 tsp yeast to 3 cups of flour-water mix to start things. Keep it in a non metalic bowl with a lid. We have a flip top quart jar but used to use a screw top. Refridgerate when it gets going and warm it to room temp to use.

    I'm a waffle freak also, but I found it's easier and quicker to use something like Krusteaz...BUT, I finely chop up a fruit of choice such as pineapple and mix it in first. Actually fruit cocktail would make a "wild waffle"!

    just used your recipe for breakfast thing morning. I ended up adding a little sugar and vanilla to it to sweeten it up a little. Great recipe, great waffles.

    You waffle freaks will appreciate this. I make corn bread in my waffle maker and freeze them. When I need just a little corn bread, like with a bowl of beans, I just toast a waffle. My daughter came by while I was in town and I told her to wait for me. While she was waiting she toasted a waffle and smothered it with olive oil that I keep in an Aunt Jemima bottle by the stove. She was not happy with my cornbread and olive oil waffles. She wants me to start labeling things. Later Don
