    Oh, MY Bacon

    Daughter has been wanting me to smoke some bacon twists. Had a small beef roast and a couple of pounds of link deer sausage we needed to use and she brought me a pound of thick sliced bacon.
    Got a glass dish, cup of brown sugar, some various rubs I had made, and black pepper, red pepper flakes. Put on rack and smoked about an hour at 275, not too dry, still soft chewey but oh my how good..... BACON. Soft, hot, sweet.....

    A little off the topic but as kids we’d go on a two week fishing trip every summer. After a week or so of eating fish dad would open a can of Danish uncooked Bacon. I haven’t seen the stuff in 25 years. Has anyone come across it?
