Homemade Canadian Bacon
Home smoked cheddar cheese
Over medium fried egg
Toasted English muffin.
My wife had to spoil hers with catsup.
had burritos again last night. Had a chunk of venison back strap out to grill but the rain wouldnt stop so i sliced it real thin and fried it with onions. Add scrambled egg and cheddar cheese. Pretty darned good if you ask me.
Another good one is bisquick egg pie.
Fry off chopped bacon
Chopped onion
2 eggs per person
shredded cheddar
milk
Beat the eggs, add enough Bisquick to make a thick batter, thin it a bit with milk to pancake batter consistency, add bacon, onion, cheese, any other veggies you want(sweet pepper, hot peppers, corn... whatever trips your trigger), top with some cheddar to make a nice crust then bake at 350 until the top is browned and knife inserted in the center comes out dry(don't be fooled by any cheese hanging on it). Slice into serving pieces. Sorry no measurements, I wing this LOL

Bacon with eggs fried in the grease has always been my all time favorite meal. It was always a treat at any time of day. The so called nutrition experts earned themselves a life long enemy all those years they tried to sell me on the evils of nitrates and cholesterol. Idiots!!

Quick breakfast casserole is bread broken up into small pieces and put in the bottom of a casserole dish. Beat about 8 eggs and add 1/2 cup milk and mix. Either use frozen hash browns or shred potatoes and put these on top of bread. Crumble up cooked breakfast sausage on top of that, pour egg-milk mixture over, top with shredded cheese, and put in 350 oven til top is just turning brown. I don't put salt and pepper on it, let everyone season their own. For added flavors, put about a half pound of crumbled bacon on top.

I like to make waffles, eggs, bacon/sausage, country potatoes, gravy. I make my waffles with %25 corn meal in my mix so it has a corn beard flavor to it. I would make up a bunch and stash them in the freezer. Pop 'em in the toaster, scramble an egg or two, ham/bacon/sausage, and make a sandwich.

Best way to reheat waffles is drop them back in a heated waffle iron. Crisps them back up!
I preheat the oven when I make the waffles, and dry them out some before they go in the freezer. That way, they come out of the toaster crispy. I have reheated in the iron but the toaster is faster and it is already on the counter. Iron is on the pantry shelf.

We had leftover rib eye steak and eggs with hash browns and English muffins for dinner last night.
Hard to beat a meal like that.
All my life we have had breakfast for supper on a regular basis. It’s hard to beat in my opinion!
Breakfast is one of my 3 favorite meals.
