    doing 50 lbs of snack sticks today and one last batch of 50lbs of summer sausage tomorrow. rest of the scraps will be for burger. I think theres about a 150lbs left in the freezer.

    You’re really going to be stocked up! How do you keep it afterwards? Do you give some away friends and family?

    Well im all finished. a 150 lbs of summer sausage and 50 lbs of snack sticks. I think over half of it is already gone. Friends, family, neighbors, family at the farm we shoot deer at, my doctor, priest, sheriffs dept, mail lady and the garbage guys all got there share. Bottom line is what i have left probably cost me 10 bucks a lb. But i dont do it to save money. If that was my goal id turn it all into burger. Its my way of thanking the people in my life and i do enjoy making it and call it vanity but many have told me its hands down the best theyve ever had and that kind of makes it worth the time effort and money. As to storing it i vacuum pack it and freeze it. I like to vaccuum pack it while its still warm. It seems to work better that way and even after 6 months in the freezer its not dried out.
