    Parsnips

    Had a chicken breast last night with some parsnips.Fixed them like my Mom did.
    Wash and peel.Cut into roughly 1/4" strips.Cook in a non-stick skillet with butter until browned.Lightly salt and pepper them.Pretty good eating.

    I make a "winter vegetable" soup in beef stock. I add onions, carrots, celery, canned tomatoes, cubed parsnips, rutebaga, and turnips. I served this for several years in a restaurant during cold weather.

    Most customers had never tasted parsnips or rutebaga.

    Jaysouth, that sounds like a dang good soup. Im a big fan of making batches of veggie soups and either freezing or canning them. Goes great with whatever meat you want to cook up at dinner time.

    I dont do too much cooking with parsnips because I only seem to plant them in the garden every 2-3 years. Maybe I need to start adding a row each year.

    If youre a fan of Au Gratin Potatoes try making it with the parsnips. Or do 50/50 potato and parsnip.
