Kind of a family tradition here when we are overrun with Zucchini. The only changes I would suggest are: don't cut off the ends until the Zucchini has been baked and use Parmesan cheese instead of the Cheddar. Using ketchup, instead of Tomato sauce is something I will have to try. Also try a little Paprika or Cheyenne if you want some 'heat' with the recipe!
