    The fact that there are no provisions to hold the item down as a cross bar leads me to believe that it was a clamp to pull something up as others have suggested.

    It's that thing, that attaches to the other stuff, that is used for that other thing, that works like the other doohickey.
    At least that's what I think it's for.

    Cheese is pressed, sauerkraut is not. Only a sterilized cloth wrapped plate is used to keep out air.
