    Ordered a Pellet grill

I ordered a Pit Boss Classic pellet grill.
It is supposed to be here Thursday.
I have been looking over the recipes on their web site.
    Dang those look good.
Now I need to get to town to pick up some of their rubs and spices...dale

We have a series 3 vertical Pit Boss, would not give it up for the world. We are thinking about picking up a horizontal Pit Boss.

I have a Traeger, as a few other members here use also. Love mine! I found the commercial rubs all too salty. I make my own with equal parts cinnnamon, curry powder, and cayenne pepper. That's it.
Got a .22 .30 .32 .357 .38 .40 .41 .44 .45 .480 or .500 S&W cylinder that needs throats honed? 9mm, 10mm/40S&W, 45 ACP pistol barrel that won't "plunk" your handloads? 480 Ruger or 475 Linebaugh cylinder that needs the "step" reamed to 6° 30min chamfer? Congrats. I have the REC TEC RT700 Bull. Would not go back to charcoal again. Temp. control is awesome. No grease flareups. You will love yours. And it's cheaper to run than conventional charcoal briquets. Cooks ribs, brisket, and hamburgers knock your socks off delicious. Enjoy, cook away, just watch the waist line.

My bet is you will enjoy it turning out meats far better than anything you have had from a commercial source outside of Texas. Many smokers do not run at the temperature their thermometers indicate. An easy answer is to get an electronic thermometer you can use to confirm or adjust the grill's information and settings. Before I figured this out my BBQ cooked faster than expected. The petal smoker was running hotter than it was set for.

Lumberjack brand pellets are cheaper and better than most others I have tried! I use their 100% hickory and competition blend depending on what I am cooking. The blend on beef and poultry, pure hickory on pork

What Mary said. Smoked pork butt, chicken breast, & German sausages this past weekend. I also like to smoke New York steaks with 100% mesquite for 25 minutes then finish them on my gas grille. You will love cooking and experimenting! Even the mistakes taste good!

Definitely learn to make your own rubs. As stated most are way to salty and not quite spicy enough for my taste.

The trick I found is to give your meat at least 3 hours at the lowest temp it will run. that puts out way more smoke. Then kick up the temp. When your butts hit the stall I usually wrap them in foil and move to pan in the oven to finish. Use a good digital thermometer to track temps.

Empty the hopper and turn up the temp as high as it will go to help clean the smoker after you pull off the meat. You don't want your pellets to absorb moisture and clog up the feeder tube.

Try a meatloaf in it! I wrap mine in bacon and sprinkle with brown sugar. Awesome stuff!

I have a batch of jerky smoking in my little Bradley as I type. Best thing I have cooked in it so far was some short ribs. I don't know what it will be like for you where you live, but you may need to find a really good butcher. Better quality meat makes better food. I found some short ribs in a supermarket and thought I'd give it a go. They were REALLY good. The supermarket didn't have any when I went looking again, but I found some at a butcher. They were rubbish compared to the supermarket ones.

I have also found that veggies are FANTASTIC when cooked in the smoker. Especially corn on the cob.

I have a little, Davey Crocket by Green mountain Grills. We usually take it with us when we go camping, use it year around. Enjoy!

My grill arrived yesterday and I got it assembled.
Now to get it burned off and seasoned as per the instructions.
My wife bought some pork ribs for me to try.
Now the big choice is to decide which recipe to try.
I think I`ll go for one of the easier ones...dale

I too have found the commercial rubs too salty. Cinnamon sounds interesting, I'll have to give it a try.

Dale, I think you'll like your new grill. I sure like my Camp Chef.

I fired up the Pit Boss today and smoked a rack of pork ribs.
I used a rub that was given to me by a Texan friend called Grub Rub.
    They turned out great.
    Tender and juicy.
I`m excited to try other things now.
    Thinking about jalapeno poppers.
