found some new canning things to do

Ive got about 75lbs of potatoes left from the 100lbs I got at the farm we do crop damage deer shooting at. There starting to sprout so I had to come up with some way to use them. Yesterday I made 14 quarts of cheese potatoe soup with ham and bacon and onion and canned that. Today I think im going to can some plain potatoes. I used to do it all the time but the wife isn't crazy about the odd taste it gives potatoes so I quit. Gets bad enough and she will no doubt eat them!

try cutting some into french fry's and then canning. you open them up and pat dry then place on baking sheet and they get done quick and dont have the raw center.

I just finished canning potatoes yesterday. I wound up with 42 quarts. They are great with greenbeans or fried in bacon grease with onions...……………………...curdog

If you have the freezer space and a french fry cutter I run them through the cutter, blanch in the deep fryer(300 degrees) in batches. Spread out and let cool then bag them and freeze. When you want fries either drop in the deep fryer at 350 to 375 or bake in the oven at 425.
