    Smoked Turkey breast today

    Fired up the pellet grill using Applewood pellets. Took a turkey breast and put some creole seasoning on it and put it in a shallow pan and had the grill on "smoke". After about three and a half hours, put a tent of foil over the turkey and raised the temp to 225 degrees for 3 more hours. Took the foil off and raised heat to 325 for about 10 min. Had to drain off a lot of liquid after taking the foil off, but all that moisture worked to keep it tender.

    Brought it in the house, let it set for about 10 min. and sliced it. Man, that was the best turkey breast I have ever made. Nice smokey flavor and the meat was soooo tender. gotta fry up some bacon and have club sandwich later in the week.
