Simple recipe for Pheasant breast needed

I have a bunch of Pheasant breasts in the freezer. I'm looking for an easy way to cook them up. What I've usually done is wrap them in bacon, dip them in Barbecue sauce and put them on the grill. I'm looking for something different.

Can't go wrong with hot grease (325*) after a 2 hr. treatment of buttermilk, salt, pepper and hot sauce. Roll in seasoned flour, shake off the excess and drop in the fryer about 12 minutes. Check to make sure they are done, not dry.

Don't forget to save a few for a Bird Pot Pie. one of my favorites. The older/larger less tender breasts should be saved for that project. It is a chore to slow cook the meat to use in the pies but well worth the effort. We use a nice creamy garlic, parsley & pepper white wine blend for the slow cooking portion. uncle mike

Don't let it get too dry even if that means slicing them in half to cook quicker.
