Had ours yesterday. Wife couldn't wait any longer. After Her fiasco with the crock pot awhile back.
So I boiled it for 4 hours, tossed potatos & carrots in the last hour and the cabbage the last 20 minutes.

    TENDER !

She had a sandwich, I went with all the veggies and Perfect Tender Corned Beef.

    GOOD

    Sandwiches tonight.

I bought our briscut yesterday and this morning I put in the crockpot.
My wife was a little upset because she always roast it in the oven and the meat was always a little chewy.
I put on the table about 35 minutes ago and sliced the meat and she snidly commented that the meat wasn't done because it was red, really red.
But, being the fantastic cook that I am, she had to admit that the corned beef was excellent. You could almost give it a dirty look and it would fall apart. And she said we'll have to make it in the crockpot from now on.
I've been wanting to do it in the crockpot for years.

I got cabbage and a corned beef but today I made cabbage and "blackened" kielbasa, with jalapeno cornbread and buttermilk. This is white boy soul food if there ever was any!

For cabbage I only made half a head, cut into two quarters, a small yellow onion coarsely chopped, salt, and a tablespoon of Better Than Bouillon roasted chicken flavor.

I sliced Polish Kielbasa into 2" pieces cut longways in half, I browned them dark brown (hence the "blackened" description) in a cast iron skillet, this brings out a delicious caramelized flavor that you don't get until you dang near burn the kielbasa, then put this in the cabbage and boil it all together about an hour or ever how long you want to boil it.

Serve it in a bowl with plenty of pot licquor to dip the cornbread in! (I had jalapenos that had went red and orange so they make a colorful addition to the cornbread).

We did ours on Saturday since the kids were planning to join us....but...they fell ill. We cooked it up and took them some...then we ate our portion alone. It was still nice...I enjoy my wife's company.

bout 10 years ago, my daughter and son-in-law went to a Dinner at a friends for St. Patrick's Day. I agreed to pick up my grand daughter and take her home after an hour. I was sent home with a huge plate of dinner which soon disappeared. "More meat for for my mouf, Papa" as my plate was devoured. 10 years later, that is my favorite St. Patrick's day memory.
