As the covid-19 gives me some free time, I'll share with you a simply way to cook boars.
Mince the venison, and marinate it for 24 hours in beer, with mustard, onions, garlic, shallot, a spoonful of olive oil, a spoonfull of vinegar, lardons, and of course herbs, salt and peper.
1 1/2 hour at 350 / 400°F.
It perfectly suits other meats. Obviously, you can drink up the beer.
