    Im confused. Why not dry it? Do you eat it as is or do you use it for cooking? I love garlic but cant imagine chewing on a clove of garlic! Way to strong for this guy.

    Lloyd I do eat it like a pickle also cook with it. I grow the mild elephant garlic also

    Pickled garlic loses the pungency and become this pickle like hunk of really mild garlic.

    If your garlic turns blue it is just a chemical reaction to something you put it in with, perfectly edible if a bit weird looking!
