    Smoked venison roast for tomorrow

    I smoked some venison for tomorrow, low and slow over hickory that came out of the back yardClick image for larger version.

    I used to do a whole shoulder once in a while, in years past. Have not done that for some time. Maybe I will do something like a roast like you did for Christmas..

    now run that through the slicer and shave it, pile on a buttered and toasted roll, some swiss cheese, caramelized onion and peppers...

    After action report!!! The family that would “never eat Bambi” are both round roast and asked to keep the rest of it!!

    Overall I think it was a success

    I did shave it thin and added some good mustard on a crunch bread

    When I do that I cover it with thick cut bacon. Adds fat to a very lean meat, and smoked bacon is good, too.

    How long and at what temp did you smoke at?
    Any tips for keeping the roast moist?

    I smoked it over Hickory for 2 1/2 hours and kept it at 150° For over an hour
