    Tamale Pie

    Here is a cool weather recipe that we always have the ingredients on hand.

    Tamale Pie

    1 lb ground beef
    1 large can diced tomatoes
    1 cup frozen or canned corn kernels
    ˝ cup onion, diced
    2 stalks celery chopped
    1 pkg taco seasoning (your choice)
    1/8 tsp garlic powder
    ˝ tsp salt
    2 tsp cumin
    1 pkg corn muffin mix
    Egg and milk as directed on muffin mix package
    Oven 425 deg.

    Brown the beef in a skillet with onion and celery. Drain off excess fat. In an oven proof casserole dish, mix together the next ingredients except muffin mix. Mix up the muffin mix according to the directions on the package, and spoon or pour over the meat mixture. Bake at 425 for twenty minutes or until brown on top.

    This recipe can be modified endlessly. By law, it is supposed to have olives in it, but my wife can’t abide them. I keep the seasonings mild for those who can’t tolerate too much pepper, but then I add lots of hot sauce for serving.

    I usually make enchiladas thru the Winter month about every couple/three weeks or so. I will try this recipe in the next month or two.

    As a native Californian myself, I still think of tamales and enchiladas as a normal diet. In CA you can find Wonder Bread in the ethnic food section of the store.

    Don't exaggerate, Wonder Bread is still found in the bread aisle.
    Along with Hostess Twinkies and HoHo's.

    The tortillas are found on the endcap opposite the ground beef.

    Made my version of tamale pie with ground jackrabbit yesterday. Might be my favorite use of ground jack, with chile and sloppy jack close runner ups.

    As a native of the Southwest, I am very thankful that Mexican food was a standard part of my upbringing. Decades later it is still part of my life including gathering the family to make Christmas tamales.

    Tamale pie? Never heard of it but it sounds like a variation on Fritos pie. Just perfect for spur of the moment snow day dinner!

    Good stuff, even my wife liked it! I did modify the recipe a little, as soon as I pulled the pie from the oven I put a lot of butter on top. Served with a thick red enchilada sauce, it was mo' better.
