    Alaskan Sauerkraut ???

    ok... Brother Boaz (charlie) promised me he was actually gunna do a write up on making home made Sauerkraut... but till he actually gets around to it and does, here is an exert on an Alaskan version..

    all it takes is 12 days, a bit of seasalt or pink salt, some horseradish, a few chunks of dill stalk and the cabbage dance....



    No toes were harmed in the filming of this video, but cant speak to the cabbage. be sure you clean between your toes.. before and after..

    I love homemade sauerkraut but no thanks! My brother uses a big hard maple ram.......not his feet!

    I am sure that kraut has flavor BUT toe cheese is not one the ingredients I like. Not even from the feet of a pretty young thing.

    Way too much info! I like sauerkraut, eat sparingly, cuz the rest of the family doesn't care for it. From today on, I won't be able to wipe that video from my mind! Lol

    buncha dang wierdo's that dont take care of thier feet looks to me.... maybe a buncha folks havent cleaned between thier toes cuz they cant reach them anymore????

    thanks RedHawk.. i too love sauerkraut... and this makes the best sauerkraut you have ever eaten.. everything in it is home grown, from the fresh horseradish, to the fresh dill, and cabbage... i doubt somebodys hand crusher puts 225lbs of pressure on the cabbage like our ancestors did with thier "clean" feet. its day 8 of the 12 days... better then 1/2 way there... still bubbling and fermenting...

    I'm 3/4 German (Pa Dutch, and Bavarian) My mom's parents were both Pa dutch. I remember my grandfather using a wood cask to ferment his cabbage. He'd salt it and weigh down the lid with a brick to keep all the cabbage in the juices. Every 3-4 days he'd skim the greenish/brown "scum" off the top (the dried up stuff after it bubbled up)....stir, resalt, then weigh it down again for another 3-4 days. I think his method took about 21-28 days though. It was definitely longer than 12.

    My fermenting crocks are way to small to be stomping in with my feet, and to fragile LOL. I make 2 gallons of kraut a year and it is perfect for 1 person plus giving a little away. Never tried adding horseradish... judging from the 3 foot tall leaves on mine I am going to have a bumper crop this year.
