    Dutch Oven Help

    Hi, Guy's,

    I need a bit of help with Camp/Dutch Oven Baking.
    I can't find my Cookbook/notes on Dutch Oven Cooking.

    Wanna bake some Biscuits, but I can't remember how many charcoal briquets to put on the lid and under the Camp Oven.

    I'm using a 12" Oven and I think it's 12 on top and 8 underneath for 15 minutes. How long to let the oven heat up before putting in the Bisquets ?

    But I'm just not sure.

    Can Someone please answer these questions for me?

    Granted it has been a decade since I’ve used a Dutch Oven but we always completely covered with the lid and had a generous layer on bottom. Either coals or charcoal, didn’t seem to make much difference.

    Basically enough that it’s covered but not so much that it’s wasteful

    Rule of three is take away 3 from the diameter of the oven, 12" gets nine on the bottom. Add three to the top, so fifteen on top for a 350 oven, standard charcoal not match light or hardwood.

    I was always told 2 X diameter of Dutch oven, less 3 as MT Gianni says for 350 degrees. Using fire coals, I make a good fire, have a big bed of coals, set oven on about 1/3 of them and place 2/3's on top. More on top aids the browning effect to the top of what you are baking, as it is not in contact with the metal as the bottom is. Here is an informative site:

    I had done it like MT Gianni said for years, but a couple years ago I watched a guy cooking who used a ring of charcoal around the bottom and a ring around the top, all coals touching. No coals in the middle and no counting needed. This works for most 30 to 40 minute bakes. For longer baking time as the coals burn down add unlit coals to the ring when they fit. The burning coals will lite the added ones. This seems to work for me and maintains the temperature better than other methods I've tried.
