    Spatchcock turkey

    Did a spatchcock turkey on the Traeger smoker yesterday. I will be doing it again! Easiest and fastest cooking turkey ever! Spatchcock is cutting out the backbone(save and donate to your nearest RINO politician) then pressing down on the breast meat until you hear a crack and the bird lays flat. This was just a little 10 pound bird and I can not believe how fast it cooked! 2 1/2 hours! This is the pic of it going on the smoker, no after, before I got my camera out the vultures err guests had eaten all the crispy skin off the top. I stuffed 1/8 pound of better under the skin over each breast, seasoned with my favorite BBQ rub(Smokin' Guns Mild) and on the Traeger. I wasn't going for a super smokey flavor so only 1 hour on smoke then bumped heat to 350 to finish.

    I have rack so I can smoke a turkey like you cook a bear can chicken. Drop an old mushroom can inside filled with wine and I can smoke a turkey in three to 3.5 hours. I've been using it for years.

    I just used my boning knife, sliced right through the ribs no problem.

    I did a spatchcock turkey this past thanksgiving. No complaints anywhere to be heard. I like the way it cooks more evenly.

    I like the spatchcock method on my birds too.

    Love doing my birds that way, been doing it for years. I did find out that it doesn't work well on a rotisserie, had to tie it back together and on the spit lol. Won't do that again.
