    Low Country Boil

    I spent a couple of days last year in S. Carolina with a friend. One night he made a Low Country Boil that was excellant! I have been wanting to make one myself and finally got around to it yesterday. I had enough for half dozen folks but things happened and it was just me and my mutts. Not a big deal because i didn't have to share!

    Bag of crab seasoning in a big pot half full of water.
    Bring to a boil.
    Add 1 lb sausage, cut up, and 2 lb taters, quartered.
    Return to boil for 10 minutes.
    Add to the pot 4 ears of shucked corn cut in half.
    Return to boil for 10 minutes.
    Add 1 lb raw shrimp and cook for a couple minutes, til shrimp turns pink.
    When shrimp are done immediately strain the food from the water.

    Melted butter on the vegges and cocktail sauce for the shrimp.

    A cutup lemon should be in the boil as well but i forgot to buy one. Besides, if there is a lemon rind in the boil some Yankee is liable to eat it!

    In the western mountains that is known as a milk can boil. Corn, Kielbasa, Red Potatoes, Onions quartered and fresh bread. Good food.
