I have made a number of cheese cakes in order to please the wife over the years. An elaborate New York recipe that I got from a chief was very complicated and ended up weighing about 8lbs I swear. The Philly cheese cake is probably the easiest and best in terms of time and trouble.

Zwiebeck is rye flour and thus gluten very light - combine half and half with ground almonds and it makes a nice crust.

My wife makes a great philly cream cheese cake with a graham cracker rust. People tell her she could sell it. The irony is that she hardly eats any herself - way too rich for her personal tastes.

No bake oreo crust cheesecake.

Oreo Crust from the store
Large tub cool whip
block cream cheese
semi sweet chocolate chips

Whip cream cheese and cool whip together until smooth, melt 3/4 of the chips and fold into this. Pour mixture into the Oreo shell, top with reserved chips, put in the fridge for at least 2 hours.

Just pour the ingredients into a blender, then into a pan and bake. Turns out well.

I bake a NY cheesecake without any crust at all. I never liked graham cracker crusts. I have used a walnut crust and it was OK. But I prefer no crust and the cake bakes and serves just fine.

For quick and easy, Jello no bake cheesecake mixes work well. You can kick them up with additional toppings if you like.
