( you could achieve this by just setting the oven temp to high and plugging the oven into an outlet)

Sorry, this will burn out the fan a lot faster. The PID can/will turn the elements off and on rapidly to maintain a certain temperature, flipping fans off and on rapidly will shorten their life span. It is recommended to wire the fan directly to its own power source and turn it on when you turn the PID on leaving it running the whole time the oven is on.

I've used the PID on my toaster oven, smoker and my lee 4-20 pot. My output is not Off/On but 4-20ma which varies the actual voltage to the heating element of the device being controlled. Maintains less than 1 degree deadband in most conditions.

Not inexpensive, but worth the money I've invested.

In the toaster operation, I use no fan operation.
    Salute!

4-20mA is the current of the heating element? No.

Fans are cheap and your not likely to burn one out as quick as you think. I sincerely doubt that cycling the fans on and off is any issue at all. My PID controlled oven has absolutely no problems after hundreds of hours running.
