    Roast Beef dinner ...

So my wife is out of town and I've been using up some home-made soups I had in the freezer, but decided that tonight I should have a much better meal for dinner. I got a beef roast, put it into an enameled cast iron Dutch Oven, seasoned it well with coarse salt, coarse pepper, and garlic, then diced up some carrots and onions and added some small potatoes and sprinkled them with a package of onion soup mix. I mixed 3 beef bouillon cubes with 4 cups of boiling water and poured it over the veggies and around the roast. I pre-heated the oven to 500 degrees and put it in for about 45 minutes, then turned it way down to 150 degrees and left it like that for the rest of the day (similar to cooking a Prime Rib). It came out looking great and tasted even better! I should have enough leftovers for about 2 more meals ... with any luck ...

When the wife is gone, you're only supposed to have hot dogs, leftover oatmeal or grits, old things in the refrigerator with hair growing on it,
and maybe some greasy mess from Burger Biggie.

OK People. Enough of this idle chit-chat.

That's the way to do a pot roast, for sure. I'm like you Al, I do most of the cooking, so when SWMBO is away, my dog and I eat good. Cooking is like a stress reliever for me and I enjoy it. My sister and I started cooking meals for our family when I was 11 or 12. My dad was a cook in the 30's in a logging camp, so he cooked a lot when I was growing up. Far as he was concerned, wasn't just woman's work.
One of my father's favorite statements: "If I say a chicken dips snuff, look under his wing for the snuffbox" How I was raised, who I am.

I've become addicted to Mississippi roasts. Brown a lean, 3-4 pound boneless chuck, and put it in the Crockpot. Put a half stick of unsalted butter on top of the roast, sprinkle over it a cup or more of sliced mushrooms, then add a packet of Hidden Valley Ranch dressing mix, a packet of either au jus or dried onion soup mix and a dozen pepperoncinis. No liquid needed. Run her on high for a couple of hours, then on low for five-six more. You'd better have your taters boiled and mashed before you fish that roast out cause you will to go eating on it directly -- and probably throwing elbows if you have competition. It's that good.
