So my wife is out of town and I've been using up some home-made soups I had in the freezer, but decided that tonight I should have a much better meal for dinner. I got a beef roast, put it into an enameled cast iron Dutch Oven, seasoned it well with coarse salt, coarse pepper, and garlic, then diced up some carrots and onions and added some small potatoes and sprinkled them with a package of onion soup mix. I mixed 3 beef bouillon cubes with 4 cups of boiling water and poured it over the veggies and around the roast. I pre-heated the oven to 500 degrees and put it in for about 45 minutes, then turned it way down to 150 degrees and left it like that for the rest of the day (similar to cooking a Prime Rib). It came out looking great and tasted even better! I should have enough leftovers for about 2 more meals ... with any luck ...
