    Guinea Fowl

    OK I now have 2 gutted and skinned birds in the Frig
    LOL I shot 3 , but 1 was a center shot with a .224 cast bullet
    That one is Coyote bait now

    Any good ways of cooking them ?

    If the 2 I have to cook turn out decent
    I have a bunch more I will be shooting

    So I will have more to cook

    Cajun Gumbo !
    Use Guinea , in place of chicken , for any good gumbo recipe . Long low simmering makes them tender . Can you make a Roux ?

    Mom would fry them or barbeque them. I think she even baked a couple but cant remember the seasonings she used. Ill bet done low and slow in a smoker would be good. I can remember the guinea salad from the baked ones when she pulled all the meat of the bones.

    Cook like a duck- greaser than a turkey- or about six hours in the smoker with the cavity stuffed with sausage or the breast wrapped in bacon and pineapple and cherries affixed with tooth picks. Please be advised remove toothpicks before consumption.

    Try bogging them down in a pot of yellow rice, they're delicious!

    The last time I had Guinea it was in a pot of guinea and dumplings. Good stuff!
