    Homebrew Recipes?

    I thought it might be cool to post up your favorite homebrew recipes. I brew a lot of Stouts and Belgian styles, and I’ll start it off with one that was very pleasing.

    Belgian style Saison
    5gal Batch
    OG: 1.058
    FG: 1.006

    Grain
    10lbs Pilsner
    .5lbs Munich (Light)
    .5lbs Vienna
    1lb Cane Sugar

    Hops
    Magnum (10.8AA) for 30ibu
    1oz Strisselspalt (added with 5mins left of boil)

    Yeast
    WLP565 (1.6L starter)

    Misc.
    Zest from 1 lemon and 1 Valencia Orange (added with 5mins left in the boil)


    Mash grain at 148* for 60mins, or until complete conversion. Sparge to collect enough wort for a 60min boil. Add Magnum hops at first boil, and add citrus zest and Strisselspalt hops with 5 mins left. Cool to 65* and pitch yeast. Ferment until it’s done.

    Most folks crank the heat up with this yeast. MANY people report that this yeast is very finicky, and stalls midway through and takes forever to finish. I fermented at 65* and it was done in about 10days. I left it for 3weeks before bottling, and it was crystal clear and a pale straw color. One of my favorite Saisons that I’ve made, for sure.

    No real category for this... tends towards Scottish Ale but I use different hops. VERY popular with everyone who has tried it and I always have it on tap. Comes out a deep copper color... usually cloudy due to the Notty yeast, stuff does NOT like to settle out

    16 pounds Golden Promise
    3 pounds Victory
    .75 pounds UK Extra Dark Crystal (160L)

    2oz Perle 60 minutes
    2oz Hallertau Hersbrucker 5 minutes

    Mash in 60 minutes at 154f with 7.5 gallons H2O
    Sparge with 8 gallons 170F water(adjust to fit your boil off rate... with the new fermenter I may have to tweak this)

    I use 2 packets of Nottingham Ale yeast
