    What Comes After St. Patty's Day? Corned Beef Hash Of Course!

    Finely dice 1 medium yellow potato,
    Finely dice 1/2 large yellow onion,
    Finely dice 1/2 BELL PEPPER (or not!)
    Finely dice 3 slices 1/4" thick corned beef.

    Boil potatoes until semi-tender.

    Brown onions and bell pepper in butter for 10mins. Add beef, add potatoes, salt and pepper to your liking.

    Mix evenly and pat down into an even layer, turn heat down on low and allow to brown, with a spatula carefully lift sections of the hash and flip to brown the other side.

    OMG this is the BOMB buddy, easy to make, adjust portions according to how much you want to make, the above amounts will feed 2 adults one large serving each. Bon Appetit!

    I always cook extra corned beef just to have enough for corned beef hash the next day and Ruebens the day after that.
