I guess this is sort of a start and you add or take out as you like as I never make the same 2 times in a row
It is going to frost , so I picked all my tomato's , mom's and the lady down the road
Gave mom and the lady down the road most of the red tomato
But I still had a Bunch of green ones , so some went into Salsa

1 quart of chopped green tomato
2 cups onion
3 cups sweet peppers ( yellow , green , red bell , banana and any other sweet pepper )
1 cup hot peppers .... or as much as you like
4 cloves garlic minced
1/2 to 1 cup lime juice
Salt kosher ..... about 1/8 cup but I am cutting down on salt

Now the strange part
Red Wine .... a sweet low cost , your choice , but my aunt uses a dark beer ... just boil it a bit before using either
Green tomato is dryer than ripe tomato's
So I need to add some type of liquid
No exact amount , I just add till the salsa has enough liquid in it to cook

I can this in pint jars
But I don't cook the salsa long , just boil to get good and hot to can
But I know others that do this as a full cooked salsa

I have added sweet corn and like it , but didn't have any fresh
