Thread: Pimento cheese

    Smile Pimento cheese

    Ingredients:
    8 ozs. cream cheese , softened
    2 cups Dukes Mayo
    2 1/2 cups white cheddar cheese, course grated
    2 1/2 cups yellow cheddar cheese, course grated
    7 ozs. diced pimentos , save half the liquid
    1 Tablespoon fresh grated yellow onion
    1 Tablespoon paprika
    1 teaspoon dry mistard
    1 teaspoon hot sauce
    1 teaspoon Worcestershire ( optional, can be omitted)
    1/8th cup dill pickle juice

    Directions:
    Mix everything up in a bowl, by hand or with an electric mixer on low.
    Eat with crackers or make the infamous Pimento Cheese Sandwich on white bread ...Yesireebob !

    Good Lord.....You talk like she was cooking and eating Chitlins (aka Chitterlings), it's only cheese, pimento peppers and mayo...nothing to get upset about.
    They Left the house because of a pimento cheese sandwich ? All I can say is don't ever accept a dinner invitation from a Cajun in South Louisiana.
    We eat stuff like Hogs Head Cheese....think about what that might be .

    Hoookay, I didn't know what Chitlins were. I had heard of them before, but had to look them up. I may try them if someone placed them in front of the pie hole, but I don't think I'll run out and make a batch. Pimento cheese on the other hand sounds good.

    Pimento cheese also goes good with burgers,hot dogs,ham sandwiches or just spread on your choice of bread types.Try it on French or Itialian bread.Good stuff.Weather home made or store bought.Makes a pretty good batch of mac and cheese too.Not bad on Ritz(R) or saltine crackers either.
    Oh yeah,try it on a batch of cheese fries too.

    I ate Hogs Head Cheese once. Put me in the Hospital.
    I'm highly allergic to Bell Peppers. Since EVERYTHING made in Louisiana contains them. I'll never eat Cajun
    food again. Probably put it in those funny donut like things too.

    I don't think there are any bell peppers in the Pimento Cheese recipe I posted...but I guess those pesky Pimento peppers would getcha ... But you know what ....no Bell Peppers in Chitlins !
    I can find you a nice Chitlin recipe if you like ?

    "funny donut like things".....no bell peppers are used in beignets , you can have all you want along with a mug of Cafe' Au Lait !

    gwpercle, you need to try growing some pimento peppers, they do quite well down here in the dryer years. They taste good raw or cooked. My wife likes them better than the ripe gypsy peppers.

    Well, I'm considered a "yankee" because I was born and raised in PA but I spent 26 years in the USAF living in a lot of different place around US and the world, then as a viscosity measuring equipment engineer spent a LOT of time in/around oil refineries throughout the south.

    I happen to LOVE pimento cheese, the wife is from northwest CO so she didn't really know what it was and doesn't really care for it. I like to lay it on thick on two thick pieces of homemade bread and then toast/grill (whatever you want to call it). Adds a whole different meaning to grilled cheese and (homemade) tomato soup.

    While I really appreciate the offer of a "chitlins" recipe. I'm going to have to say thanks, but no thanks. I don't think I could find them where I live. And I'm not about to venture into those area's of LA Cnty where you could find them.
    I'm Jewish, so I'm gonna stick with that as my excuse not to eat pork products.

    I'll just eat my my Bacon/Cheddar burger, and wash it down with NAVY Coffee.
    None of them furrin beverages for me. Never understood why folks would spoil Good Coffee by putting weird things like cream & sugar in it.

    As far as funny donut looking things go, again I'm stick with "Bear Sign" my German GrandMa used to make. No powdered sugar needed.

    And that Hogs Head cheese I ate, was in a Little Diner in Baton Rouge. As if the U.S. NAVY & THE BLASTED JARHEADS didn't give me enough reason to hate swamps.

    Where I grew up in S.C., the stuff was a staple and you could buy it packaged in any grocery store, people ate it all the time. Hadn't seen it or even heard about it in years now that I live in the Midwest. I liked it as a kid, might have to make up a batch of this for me and the wife.

    Had all but forgotten about Dukes mayonnaise too, until some of the in-laws gave us a couple of jars of it a few months ago. Good stuff. I like the Midwest better, but do admit there are things I miss and like about the deep south.

    A little town close to where I grew up has as their annual festival The Chitlin Strut. They cook and eat dump truck loads of them. Never could get my head around eating chitlins though. Info here; http://www.chitlinstrut.com/

    I grew up loving that Kraft pimento cheese spread packed into celery, but I don't see myself cooking up a batch of homemade stuff.

    I thought Louisiana had some weird Festivals..Red Ant , Bonnie and Clyde, Zydeco , Boudin , Boucherie , Crawfish , Blue Crab, Frogs , Muffaletta , oyster , fried chicken ......But the Chitlin Festival wins the prize...hands down ...A#1

    Have you ever been ....a dump truck of chitlins would be amazing.
    I have been to the Louisiana Giant Omelet Festival www.giantomelette.org they cook a huge omelet in one huge pan with 15,000 eggs , butter, onions salt and pepper , it smells good ! But a Chitlin Festival....Oh Man that would be something. Thanks for the link.
