    whats for dinner on the 4th?

    I took the basting needle to two whole chickens that will be done beer can style. Some corn on the cob and my learning disabled son put in a request for chili cheese frys. Kind of an odd mix but whatever makes him happy. Just picked some rhubarb and some fresh strawberries and the wife is going to make a strawberry rhubarb pie.

    Hamburgers for lunch at a gathering of about 80, then steaks for supper at a smaller gathering. I am supplying watermelons for both. We once did 4th July parties here with about 200 attending, but have gotten too old to keep it up.

    Venison tacos and a few sides including home grown pickles and a watermelon picked from the garden last night for desert. 90% of the meal came from the land we are sitting on.

    Not much going on today, but I'm having a shrimp boil for my daughters on Friday.

    Loading up 500 rds. of 327 right now for them to shoot.

    Foot-long hot dogs with chili, sour kraut, relish, mustard, onions, etc. The dogs are Nathan's & the buns are HEB foot-long's.

    Decided to go easy & classic this year!

    my family had some activities last weekend and Monday.
    Today (the 4th) is a "do nothing" stay-cation.
    The city of Glencoe offers little on holidays, as there isn't much to offer tourists and/or travelers, in fact most residents leave town for the holidays. I treasure those days, like today, it feel's like I am the last man on earth, the town is so quiet. It rained a bit today, so I sat out on the patio and enjoyed some of that. as for what's cookin' ? I slept in and had Breakfast for Lunch...and I may very well have Breakfast for supper as well (bacon is on sale this week, LOL).

    Just got back from co-grandparents house - ribs on his smoker, hot cornbread, veggies, watermelon. Ice Cream for those who wanted it.

    Kids decided to take the grandkids back to Colonial Williamsburg - they live in Pocoson, so it's just up the road from them. We have to cross the river and drive another hour. We didn't want to join the crowds there today, can go another weekend.

    Mesquite smoked 1.5” thick ribeye - medium rare, garlic parmesian roasted new potatoes, sautéed portabello mushrooms in butter, fresh white/yellow corn on the cob, fresh snapped grean beans seasoned with hickory bacon chunks and bacon grease, fresh-baked warm crumble-top apple pie & premium vanilla ice cream.

    And all the adult libation(s) of your choice you care to imbibe to wash it all down!

    Gotta go check on those steaks in the smoker grill right now!

    Then about 10PM - - - eveybody hits the swimming pool!

    Slow smoked large Briskit 14 hrs. Yesterday, wife made potato salad with my sweet pickles from last year’s canning. Fresh tomatoes for desert. With of course big watermelon, chilled.

    Stuffed peppers !
    Had a good crop of large gypsy peppers and bell peppers just right for stuffing.
    This batch has ground beef, yellow rice, the trinity , lots of garlic and Italian cheese .
    They in the oven now.

    Being as I`m so cheap that I would make a Scot seem like a spend thrift,I usually shop for the markdowns in the meat counter.Ex wife said I could squeeze a nickle so hard it would give birth to a quarter.
    So today,I got a chuck roast and cut it up in chunks and simmered it till it fell apart in BBQ sauce and had BBQ sandwiches.Added some chunked up red onions for a little extra color and flavor.Sauce is whatever I have on hand.Sometimes just a combination of leftover bottles.In the kitchen I`m just a lazy old pfart.That`s why I love the low setting on the burner control.Set and forget for a few hours.Have enough leftovers for about 4 more meals.That goes great on French or Italian bread.Hope all had a happy and safe 4th.

    Since it thunder stormed until almost 2pm the BBQ got pushed back to tomorrow, I am not using my Traeger with near constant lightning around!

    So bacon, eggs, toast!

    I put four beautiful ribeyes on the grill, along with a Vidalia onion wrapped in foil with Worcestershire sauce. Lori baked some potatoes, and made a salad.
    She likes her steaks marinated in Dale's Sauce, so I told her yesterday to put hers in a zip lock bag overnight. I like mine covered in olive oil with seasonings, so I got mine ready today. I started grilling the onion @ 1745 because it was too hot to be out for long. 30 minutes later the steaks went on.

    I learned long ago not to use a fork or pointy thing on steaks while grilling. When the steaks were ready we shamelessly stuffed ourselves.
