Would I see an accuracy difference between pistol ammo dies?

What distance are you shooting them at?

What is your group size at that distance with a good factory JHP load?

^^This^^ Most of us are not accurate enough offhand to see diff in reloading dies. Lee vs say Redding, I doubt it affects most peoples shooting. If you can shoot sub 2" offhand groups @ 25y, you might find some accuracy edge to a higher end die set. I find seating dies can make a big diff in getting bullets into the case without base deformation thus better accuracy. I only need 5" @ 50y for my needs. Hunting revo, about half that.

Yeah, I'm strictly shooting groups from a rest and bench (not a machine or Ransom rest) to test accuracy.

I'm scanning in my targets and using OnTarget software to measure the mean radius. Doing this, I've found measurable differences in different bullets and powders. I've used headstamp sorted range brass, but haven't weighed or trimmed them. Just sort of looking what to try and tweak next. I'll probably just stick with my Dillon dies and try weighing brass or bullets, or different primers.

He didn’t but he also didn’t say what his setup was doing right now, so it’s hard to say what improvements could be made.

To date the best group I have shot with cheap Lee dies was 5 shots in just under 3/8” at 100 yards (not with a pistol or standing). I have shot a lot of larger groups with much more expensive die sets...

Sometimes spending more money can make a difference but not all the time.

No. Your training and form matter far more unless you’re using a machine rest. Work up good loads with differing bullets, you will find out what your handgun likes.
