Made liver fried in bacon grease and mashed Yukon golds, man that was good. Who else likes liver cooked in bacon grease?
I use bacon grease to fry my onions till golden brown. Remove the onions add my breaded liver. Once the liver is done I make gravy out of the liver drippings. Warm the onions up add the liver into the gravy then serve.
Oh yes! Vandalia onions!

About once a month I get a hankering for that dish. When it happens, nothing else satisfies. No one else in the family appreciates it so I've found a small restraunt that serves it that way just for me. Good stuff!!!!
