    Ultimate Grilled Cheese Sammich!

    I think I have made the ultimate grilled cheese sammich!!! OMG it was DELICIOUS!! I will have to make this when I make a pot of chili but tonite it was served with hearty tomato soup, SO good!!!

    This is Cabot Seriously Sharp Cheddar inside of artisan 3 Cheese Bread, with shredded New York Sharp Cheddar cooked onto the outside. Yeah the crispy bits are worth fighting over....

    Add bacon to it. Had one the other day at a local grill on a whim. The bacon was fried first so it was crisp. Not sure I'll eat another cheese sammich again without bacon. Yuuuummmmyyyy!

    I can see bacon on this grilled cheese. That would be wickedly good! I can also see, smell, and taste bacon and a FRIED GREEN TOMATO on this grilled cheese too!

    I used smoked beef brisket in my GC sandwiches.. Also do the cheese inside and then melt/bake cheese on the outside like the pix.

    That and a big bowl of chili goes down good on a cold (?) AZ night!

    Put a fried egg and bologna on it. Besides grits, the grilled cheese sandwich is the second most customizable food there is. Bon' appetite.

    When you start putting anything but cheese and bread on that skillet, it's not a grilled cheese anymore, it's a grilled sandwich! Ever hear of a cubano or panini? There great, they have cheese on them, but there NOT A GRILLED CHEESE!

    That's a fine looking grilled cheese sammich you got going there DougGuy!

    My granddaughter went home and proclaimed to her mom, "make my grilled cheese like papaw". She called me and I told her, "you can't do it, because you don't buy butter"!

    I make mine with pepper jack cheese. That and a nice hot bowl of split pea or bean with bacon hits the spot.

    To contrast your delightfully looking sandwich, on the job we often made our version. Two slices of bread put in toaster, as a couple of slices of sliced cheese were taken out of fridge. When toast popped up, the cheese is simply placed between the two slices, and then placed on a piece of paper towel in the microwave, where it is nuked for 15 to 20 seconds. Bion, it's not an unhealthy prep as there's no butter or margarine used on bread, or in pan. Very quick, easy, no pots or pans, and after eating it, the paper towel "plate" now becomes your napkin, which is further recycled in a trouser pocket for future use. For kicks, you may wish to try it... and discover how good it is!

    Nope the Springfield Sandwich tops it(named for a Cafe in a town I worked in)

    2 slices sourdough bread(they baked their own daily)
    Slightly shredded leftover roast beef
    Sliced tomato
    Swiss cheese(aged is best!)
    Thousand Island dressing
    Butter

    Butter the outside of the bread and lay both slices in a pan butter side down
    Put cheese on both
    One just one side add thousand island dressing, sliced tomato, roast beef(warmed in broth)

    Grill until cheese is melted and bread is nicely browned then flip the cheese only side on top of the other side. Do NOT try to build this and flip it to cook the other side, you will make a mess! A sandwich press works for this really well if you want to assemble then cook.

    Serve with a cold beer and beer batter onion rings! This was lunch at least once a week when I worked in that town and it was so filling I often skipped supper. When assembled it is about 2" thick! Yes use that much roast beef!

    Good point! Grilled Cheese is Grilled Cheese Only! Add ons make it a plain sandwich.
