Old traditions. Those who eat chicken go backwards, those who eat beef stand still those who eat pork or fish go forward. Spanish tamales, rest of meal Black eyed peas, corn bread, greens, I forgot the rest of good luck traditions foods.

I always do a Ham Joint as follows for Christmas.Soak in Water for 24 Hours changing the water frequently.Add a Bay Leaf and some Peppercorns and Boil for 1Hour.Drain and Wrap in Tinfoil and Roast for 1Hour.Unwrap place on a wire tray in a meat dish.Remove the Skin Taking care to keep the Fat on.Score the fat in a chequered pattern and stick a Clove in each square.Make up a syrup as follows. The Juice from a Can of Pineaple mixed with Soft Brown Sugar boiled until thick and poured over the Ham.Roast uncovered for 1Hour until the Fat is Crisp. For New years day we Cut thick slices and Fry them in Lard, served with Mashed Potatoes, carrots and Green Peas.Lovely Grubb.
