    Thai Dipping Sauce

    My son has lived in Thailand for many years, and is an excellent cook. One great recipe we really enjoy is a blackened venison salad. Just make a tossed green salad however you like it, then add a pound or so of hot, thinly-sliced blackened venison. (I have previously posted my recipe for that.) The dressing can be anything you like, but this is a real eye-opener:

    Juice of one lime (around a quarter cup)
    1 T sugar
    1 T fish sauce
    cayenne pepper to taste.

    This also makes a great dipping sauce. Sriracha can be used instead of cayenne, and you can vary the amounts of ingredients to suit your taste.

    Yoiks! That is a lot of fish sauce. I’m going to try it anyway though.

    Made it the other night with two smaller limes and two tablespoons of sugar. A full tablespoon of fish sauce, though.
