eggs benny today (1 x a month) usually coffee and deer sausage or moose or something from the field just has to be light. Now supper is a whole new thing!!!!

Belgian waffles - Reading my mind. I am getting closer and closer to ordering a waffle maker again, those keep sounding GOOD. Not every morning but more often than I'm having them NOW!

Today was half a grilled rib eye, about a cup of hash browns with 2 fried eggs on top. Topped it off with some grated sharp cheddar then a ladle of sausage milk gravy.
I make homemade waffles and freeze them. Take 2 from the freezer, drop them back in the waffle maker to thaw and re-crisp them as they heat up. WAY better than store bought frozen waffles in a toaster.

My waffle iron is older than many people on this site going all the way back to the 60s, and still working. Nothing is better than gathering eggs from the nest one evening and eating several of them for breakfast next morning or using them and unbleached flour with whole wheat flour, flax seed meal, wheat germ, etc to make waffles. and freeze left over ones for later like Mary B said. You can add or delete ingredients to fit your own taste buds.
Key with whole grain waffles(I grind my own flour so only kind) is to whip the egg whites to soft peak then fold them into the rest of the already mixed waffle batter. Makes the fluffiest waffles you will ever have! And they have a crispier texture on the outside.
Never been a big fan of waffles, but family loves my pancakes and french toast.
They also like my breakfast burritos which I make with eggs, leftover hash browns, bacon and cheese. Add a little ketchup that's been spiced up with some Pico Pica and roll them up.

The beaten egg whites work in the heavier grain pancakes too, makes them fluffy instead of dense.
I'm not very traditional with breakfast. Ive got a slice of bologna from the deli that's cut almost 3/8" thick. Tomorrow morning is fried bologna with 2 strips of bacon and swiss cheese on wheat toast.
