    Leadsled Jerky

    From the grill of an Oldsmobile to the grill of the smoker. Poor little one didn't look both ways before crossing, the neighbor called and said a fawn with a broken back was down but not out. Cant get any fresher than that.

    Half of one backstrap was bloodshot, I brought the other strap to the neighbor and am jerking the butts. (that sounds nasty). We eat fresh liver for supper tonight.

    better use than leaving it for the buzzards. Making jerked venison or jerky? Both sound interesting to me, never tried fresh liver.

    Well I missed supper last night so the liver was served for breakfast topped with sautéed sweet onions and a side of home made hash browns. Sweet and tender. Melts in your mouth. Did I mention it was a fawn, about the size of a labradoodle.

    I always gave the liver away since I never and still don't like beef liver. I gave some to a friend once and he insisted on having me try some. After that he no longer gets all of my liver, I still share some with him.

    Deer liver much milder than beef. I won't eat beef liver but deer liver is good.

    Deer liver and heart are eaten the afternoon/evening of the hunt. I was skeptical but my hunting partner has me hooked now.

    That is great. In Texas it's illegal to collect the deer you just ran over for some dumb reason. Our crows and buzzards are WELL fed.

    If you kill it the first bite of liver is just as it comes out of the body. The biggest problem most people have with liver is over cooking. That makes it tuff and bad flavored. All I can say now is enjoy and I am jealous.

    Around this time of year, I see so many road kills. Always hate to see that. Just imagine how many crawl off and suffer. Glad you could provide the little guy with relief from further suffering. Nothing beat fresh venison, especially the young ones. Bon Appetite!

    Yep that's the law,but if you report it the GW will let you have it,if you have a tag.. not always but I've seen them do it couple of times.

    Yes, heart is delicious. Liver, not so much; kidneys even less so.

    It's not for me but I did like it once! I'd been packing elk out all day & it was late, we were camped deep in the Selway country of Idaho & when I got back to camp my buddies had fixed liver & onions! I ate it & ate seconds but I haven't ate it since. That was a long time ago & I'd still rather eat a horse turd than liver, everyone has their likes & dislikes, one of mine is liver!

    Tennessee always allowed one to collect and use a roadkill with just a call to local wildlife officer, but caught grief nationwide when they decided to make it official and ran such law through the legislature some years ago.

    I have used one harvested by Carolla and the entire side hit by the car was beyond use.
    Forest critters had no such issues and eliminated that part.

    As others have said MOST liver is far and away WAY OVERCOOKED.
    Cook onions just short of caramelized stage.
    cut liver at an angle and coat with flour.
    Cook in the same pan used for liver (quickly just til barely done).
    Cover with the onions to warm the onions
    SERVE
    Amendments
    The Second there to protect the First!

    This was in the road a couple of miles from my house on Thursday night, surrounded by pieces of glass and plastic. I figured by the time I got home and came back with the truck it would be gone.

    Ive reported 4 or 5 in the last 10 or so years and they have told me to take them, no tags needed. I guess its whatever area you are in and how strict the wardens are who patrol it. Only had to put down one doe. The rest were DOA. I do call a local GW direct though so maybe that has something to do with it.
