Pulled the little Staub enameled cast iron baking/serving dish out today and put it to work. Asparagus with garlic and smoked gouda cheese wrapped in Jamon Serrano ham topped with lemon pepper, shredded cheese and Benton's marvelous bacon! Oh MY this recipe will be a keeper!
Trim and blanch 1lb asparagus spears. Lay out a thin slice of Jamon Serrano dry cured ham (Or Prosciutto) sprinkle a bit of fresh crushed garlic and some shredded smoked cheese in the center, lay 5 asparagus spears in the center and roll the ham around the asparagus. Repeat to use up all the ham and asparagus. Spread 1 or 2 tbsp olive oil in a cast iron baking dish, arrange asparagus rolls, top with coarse ground lemon pepper, more shredded cheese and Benton's hickory smoked bacon crumbles. Bake at 425F for 20-25 minutes and serve!
