    Tender Quick in place of salt

    I thought I had prague #1 on hand but apparently either I put it away so well I can't find it or I'm out. I want to make a batch of ground beef jerky and already have the meat thawed out.

    Can I safely substitute Tender Quick for the regular salt and prague #1? I have googled this question till I'm blue in the face and still haven't found an answer. I'm not interested in a debate about the safety of nitrite/nitrate and such, just if the Tender Quick will have enough of either/both to make safe jerky. I have prague #1 on order but it looks like it will be late this week till I get it and I really don't want to refreeze the meat unless I absolutely have to.

    Yes, tender quick has both nitrate and nitrite. I found a recipe online, for 5lbs ground beef / venison, use 2 rounded tablespoons tender quick. Add pepper, garlic, and spices as you like. I haven't personally tried this, as a batch of jerky at my house wouldn't last 2 days. Hope this helps.

    Takes about a half tablespoon per pound.
    Much more than "pink salt" but will do just fine.
