turned out good. I say good and not great because I forgot to grease the bread pans and it kind of stuck a bit. That and its a bit dry like bread. how would I make it a bit moisture like banana bread? Maybe add a bit more oil? thanks for the help.

Bit more oil or an extra egg. Don't bake quite as long, test with a skewer, if it comes out clean it is done.

I pull the loaf out of the oven when tiny 'clumps' stick to a toothpick.
Not shiny/wet globs but semi dry clumps.
I've over baked countless batter breads.

Saw this post a while back and decided I should try out the rhubarb-bread myself. What an interesting idea.

Boy was it tart and delicious!

Much thanks to Lloyd Smale and MaryB for mentioning it on the forum.

want something REAL good. Make the rhubarb bread to the recipe and then make some cream cheese frosting and spread it on top.

Mary, thats the way I would want it.I am not a big fan of cream cheese unless a dip made with jalapeno peppers ground up in it.You have to mix it to your taste.

Only place I like cream cheese is no bake cheesecake(way simple to make and refreshing), and in jalapeno poppers(and I mix in half cheddar)

Cream cheese and salsa dip. Mine and my 17 year old's weakness.

Add sour cream or yogurt. That is what keeps a good banana bread moist. Base it off a recipe like this one http://allrecipes.com/recipe/229353/...-banana-bread/
