If you could have only one knife, which would it be?

Well...out of my current knives and stuff I've used, the SOG Seal pup would be mine. I just prefer a strong fixed blade with good length to it. Used it for filleting fish with no issues and got it sharp enough to shave with when bored....

I've been carrying my benchmade auto and a gerber multi tool for so long that it would be my knife(s) if I had to skedaddle or something. But if I put any thought into it I would probably opt for a nice fixed blade like the SOG Seal Pup, or one of the Gerber survival knives I have.

I don't know much about high end commercial knives. If I could only grab one [that I already own] it would be the one I just finished making out of a 50 year old meat cleaver. I don't knwo what kind of steel they made that old thing out of but I ruined a couple of brand new hack saw blades and both sides of a nicholson mill bastard file shaping the silly thing.

Lemme tell ya though, it took an edge that was darn impressive. It took a long swath of hair off my arm in a single pass.

I have an old Soligin heavy cleaver . Man what a nice piece of steel that is ! Nothing to getting it sharp , yes shave sharp , and it stays sharp like thin sliced tomatoes sharp . Need the ribs off the deer spine ? 5 at time fast enough ? I love it ........ impractical for daily use but it makes short work of quarters and whole chickens .

I'm a knife collector and have a huge selection to choose from, including three made by Randall. The one that I carry, daily, is the Buck 500 (Duke) folder.

IMO, it's the perfect size. Slim design, but large enough to do heavy chores. Comes with a belt pouch but I never used it. Disappears inside my jean's pocket. What I also use for field dressing and skinning big game. Easy to sharpen and holds an edge. Wore out the blade, after 30 years, and sent it back to Buck for a rebuild. Came back promptly, like new.

A Kershaw folder with a 2 1/4'' spring assisted blade. Fits in the coin pocket of my jeans. Real easy to always have with me and covers a lot cutting chores.

I like this one . It holds enough oil to slice cheese , it slices tomatoes as well as any Ginsu ever . It's also handy for removing ribs and slicing lunch meat .

Well, here's what Jim Bowie is reported to have carried for an everyday knife:

I made that as an exact copy of Joe Musso's Bowie which has LOTS of good evidence it might have been owned by Jim Bowie himself. I forged it from a bar of 1080 steel, heat treated to about 59 Rc hardness, so it will cut.

Why hasn't anyone mentioned any folding knives with the top grade of steels we have today? M390, S110V, M4 etc.?

If I had to pick one it would be a drop point Benchmade Griptilian in D2. For EDC I prefer the Mini version. But the larger one is more useful if I have just one. I have two in N680 but I'm not a fan of the steel. It chips easily and loses it edge quickly. First one I bought was in D2. While harder to sharpen it holds an edge forever and is extremely tough. After looking at their custom configurator I think I'll be ordering another mini in S30V. Seems like a good compromise. I've never had corrosion issues so M4 may be on the table as well.

My everyday carry knife is an assisted opening Kershaw. Not sure which one....maybe Onion? Only cost me about $40.

Anyway, it is light, handy, and I could gut a deer with it if I needed to.

Probably not a great knife or one to show off but it works.
