    I always thought corned beef hash wash just threaded corned beef, I know we down under like our corned beef or silverside as some call it, in fact we will be having it over the weekend. Regards Stephen

    Yeah you are correct. We always made extra beef roast with potatoes onions .carrots whatever and the left overs were run through the meat grinder. Then fried crispy.

    Cooking another CB today. CB sammiches tonight. Save a couple slices for the Wife for another Sammich.

    Tomorrow making Corned Beef Hash.

    Found out my Daughter has decided to LOVE MK hash. Hope she doesn't try the real thing. But then it'll go on sale soon for St. Patrick's day.

    Corned Beef goes on sale here, about 40% cheaper after all the green beer is gone. I got one and cooked it 3hrs with about 1/4 jar of McCormick Pickling Spice added, ate off it a few days then made CBH in a big cast iron skillet. It was easy! The worst of it is chopping all the veggies.

    Peel, finely dice and parboil 2-3 cups worth of Yukon gold or Florida gold potatoes.

    Dice the same amounts of yellow onion, green and red bell peppers and start them browning in a skillet with 1/4 cup olive oil.

    Add 3-4 cloves garlic, smashed and chopped, add salt and pepper to taste, cook until onions are translucent but not quite browned. Drain potatoes, add to skillet and keep cooking to suit.

    Slice and finely dice 3 - 4 cups cooked corned beef, add to skillet and stir mixture until well blended. At this point I use some small food storage containers (Dollar Tree has them at incredibly good prices) and freeze portions for later use.

    I always buy extra when on sale to have throughout the year. Cook it up for a meal and then leftovers (which are just as good). Your recipe ^^^ is just about the exact same as I make mine but I just use any potatoes we have on hand.

    Who'da thought 250+ posts just on corned beef hash

    I make it a few times a year when I catch beef briskets on sale.

    It's no big deal. Mix the spices called for & brine/pickling solution.
    Not everybody does- but I trim the heck out of it. I don't care much for pickled & boiled beef fat.
    Put it in a crock pot bag, put that in a big soup pot, and place in the refrigerator for a couple weeks or so.
    Take it out and boil it. It you want less salt, change the water after a hour or so and boil it twice.

    It's more or less the same as pickling eggs or beets. You just boil it at the end instead of the beginning.

    I used to eat a lot of it. The quality can very depending on the brand. I once got some that was almost only potatoes. I’ve made it myself with caned corned beef, fresh potatoes, onions, garlic and a bit of hot peeper. That’s the best I’ve had.

    My Aunt , Lelia May , made the best from left overs , corned beef or beef roast , and potatoes we boys dug out the ground and peeled for her .... no cans !

    Yes but a can of Mary's Kitchen (brand name, not me!) hash works in a pinch or for a lazy meal.

    IIRC this was one of the menu items in the GI tray rations from the late 80's. Must be popular in Canada, during Reforger a couple trays of corned beef hash made great trading material with the Canadian forces.
