Happy St. Paddy's Day - Corned Beef in the Slow Cooker

The Lazy Irish (well part Irish) cooks way

In a large Crock Pot put in 3 cups of water and 1 bottle of beer (dark is my preference)
add quartered red potatoes to cover the bottom, add 1 medium Onion wedged
Add baby carrot cut into planks/Quarters/Match sticks
Put your Beef Brisket on top and sprinkle on pickling spices (or the little packet of spices)
add some crushed garlic about 4 cloves worth
Lit it up and put on slow/low for about 7-8 hours
then Add your Cabbage wedges and cook another 45 to 60 min until
    bright green but tender.

Best way to make a point cut is on the smoker, all that fat renders out!
