    big meat sale today

    town about a hour away has a supermarket the has a once a year meat sale. I LOVE meat sales. I bought 100lbs of pork but, 50lbs of pork loin, 50 lbs of bacon, 40lbs of back ribs, and about 75lb of steak. Came out of there with a $490 tab. Darned steak counted for more then half of it. Just don't understand why pork has come down lately and beef is still high. I can eat pork loin right now for 1/3 the cost of hamburger!!!! that's sure a no brainer. Poor pigs, they get no respect.

    Yeah, I can afford steak but have been eating more pork than anything these days. I don't understand it either. I don't know how many you feed but I don't think we eat that much meat in a year.

    People sold off their cows during the drought of 3 years . No water and no profit if you can't graze em . I'm in Texas use to be more cows than rabbits . you can dive miles and not see a cow . Rain is back but will be several years to restock .

    I wish a town around me had a giant meat sale like that. I'd buy a chest freezer just for that!

    Live cattle prices are down 40% from this time last year. Perhaps the fact should be presented to the supper markets !!

    pigs are cheep because china owns most of the sows, they even own most of the sows in this country, and are balls to the wall production. with economy of scale like they have they can make a 1 dollar profit per head and be millionaires.

    The way they advertise it is a once a year sale when they buy in quanity and sell it to there loyal customers at there cost as a thank you for there loyalty. You have to have one of there little swipe cards but its far enough away that we don't get there but maybe one other time during the year. Seen people wheeling two full carts of meat out of there. It was crowded at 730am when I got there. Only problem is that they only advertise it for two days before hand and its a different day in the spring every year. My main purchase is the pork but. Its 99cents a lb and it doesn't get any cheaper around here. I buy a 100lbs to make all my sausage and for mixing with venison to make summer sausage.

    Same up here, can get whole pork loins for just under 2 bucks a pound most weeks, but lean ground beef is 4 a pound. I just don't understand stew beef at 6 to 7 a pound, thought it was trimmings, I can get cheaper steak and cut it up myself for stew.

    They are slaughtering the cattle so lean now that all the beef cuts are tough and tasteless. I use to buy whole rib eyes and cases of tri-tips from the wholesaler, but the only beef that I eat anymore is ground. I will mix it with ground venison. I have bought whole chickens at $0.49 a pound and pork but at 0.99 and filled the freezer.
    Since they cut the fat caps off pork loin, I won't buy that anymore.

    Got a local grocery here that regularly has boston butt anywhere from .99 to 1.28/lb, depending on the week. We eat a lot of pork, quite a bit of chicken, and lots of venison. Wife has discovered 'chuck eye steaks' at the food lion.. Honestly, better than a ribeye as far as I'm concerned, and we can find them for about $4/lb. on sale. That's about the only beef we buy anymore...

    We raise our own beef. I can buy pork in the store cheaper than I can raise it. Currently have 3 chest freezers in the basement. Told the wife if I need any more room I am puttin in a walk in.

    Boaz is right. Cattle are longer term "investments" than pigs are. Most pork is taken as soon as it quits growing fast, and processed. This keeps the profits high enough to stay in business. With cattle, things move MUCH more slowly, and as he said, a drought or other bad weather CAN and DOES affect the price of beef, because when there's less to go around, the price naturally increases.

    I'm not supposed to eat beef but once a week now, and am supposed to stick with pork, poultry and fish mostly. I love them too, but gee golly wow do I get a hankering for a nice, juicy steak every now and again!!! And when I eat it now, I don't want any "help" from any sauces, etc. that I once loved. Just the plain, well cooked steak (slight trace of pink in the middle) and that's IT! Mmmm mmmm GOOD!

    I guess I'm the equal opportunity employer, though, since I like them ALL.

    Check your store for the 'bargain bin' in the meat section . At least 3 stores here have one , generally 40 to 50 % off . Whatever they have on sale they have too much of at the end of the sale. The help usually culls the meat around 7 am (give or take) by expiration date . Bargain bin stuff still has a couple of days to go . Freeze it if you don't plan on eating it soon . If it's been refrigerated it's still good 2-3 days out of date , they have a safety time margin figured in the expiration date .
    If you get there as they are culling you can make out big time . We cook a whole oven (or grill) load of meat at a time. Use a food saver and vacuum bag it . Good deal and already cooked ..........heat and eat . Had Italian sausage we made 6 months ago already cooked for supper tonight. A food saver is also a money saver and danged convenient. Italian sausage was bargain bin meat .

    I have not bought any ground meat or "burger" in years. Pork butt is deboned but leave a fair bit on the bone. That is baked in the oven while grinding. I don't mix it with my venison anymore. I prefer to mix as needed when needed.
    I will also stock up on pork loin, butter fly some. Take the dark ends and use them to lean up the pork butt.
    I have used ground pork as replacement for hamburger in about anything you can think of with excellent results. Makes a dandy meatloaf. If I want breakfast sausage, I thaw out a package and add my seasoning and let it set for a few days in the fridge. Same for Italian sausage for meatballs or spaghetti sauce, pizza etc.
    I do buy a few steaks to supplement the venison steaks. If I really like you, you get venison. If your just an acquaintance you get beef.

    I need to get pork butt and make breakfast sausage... love to use my hamburger press to make a big sausage patty, fry up 2, put on a toasted english muffin with a slice of american cheese...

    my wife laughs at me mary. Says I'm obsessed with making sausage. Ive got probably a 150 lbs of various itailan sausage, brats, breakfast sausage ect all ready made and bought the 100 lbs of pork but to make more. She just cant get it into her head that I can make supper meat for a little over a buck a lb or pay 4 for it in the store. That and shes proabably right. I'm kind of excessive compulsive with meat processing and guns and loading.

    Making it yourself means you control the fat level, I don't add fat to pork butt to make breakfast sausage.

    Pork butt can be used for almost everything beef is good for . It's generally available at some store for 99 cents a pound here .
